Tried and tested recipes

Here’s a recipe for my own St. Clements lemon and orange curd.

4 large eggs
8oz or a packet of unsalted butter minus a slice
1 tablespoon of cornflour – make sure its level
The zest and juice of 3 large lemons and 1 orange (don’t use all the orange zest)
12 ozs of caster sugar – golden if you have it

Prepare 3/4 jam jars By heating them in the oven to sterilise them.

Crack the eggs into a saucepan and whisk them with a ballon whisk.
Add all the other ingredients, the butter will have been cut into cubes, and heat the mixture over a medium heat, whisking all the time. Continue for about 8 minutes or until the mixture thickens, when it does, continue whisking for a further minute at the lowest heat.

Pour into the jam jars, cover with a waxed disk and seal jars. Store in a cool place, preferably a fridge. They keep for about 3 weeks. Ideal for sponges, tarts or on bread.

sticky marmalade cake

Sticky topped treacle, marmalade and ginger loaf

125g butter
125g muscavado sugar
200g plain flour
2tps baking powder
1tps ground ginger
2 large eggs beaten with 150 ml of milk
4tbs black treacle
5tbs of marmalade
3 balls of ginger, finely chopped
100g of ready to eat apricots
Walnuts

Prheat oven to 190c

Mix butter and sugar in processor
Add flour, bpwd, ground ginger, black treacle and egg mixture

Stir in 3 tbs of marmalade, the ginger, apricots and walnuts
Bake for 50 mins in a loaf tin (9 x19)
Last few mins, add the rest of marmalde as a glaze

Mulled wine and cranberry tea bread

Wine mulling spice bag
200ml fruity wine
1tbs of honey
75g of ready to eat figs
50 g stem ginger
75g whole blanched almonds
50 g of cranberries 50 g sour cherries or 100g of sultanas
100g of light soft brown sugar
2 lg eggs
Grated zest 2 orages
100g fresh cranberries
225 g of sr flour
1tps cinnamon
1/2 tps ground allspice

Topping
75g of cranberries or cherries/ sultanas
2tbs oange juice
4tbs redcurrant jelly

Make the mulled wine with honey, set aside to cool
Mix all the fruit together then pour over the wine and leave to soak for 30 mins
Preheat oven to 160c
Stir beaten eggs, orange zest, fresh cranberries, into fruit
Add sifted flour, and spices and mix

Bake for 55 mins
When cooling slightly add the topping
